San Dionigi - Rosso IGT Verona "Kardia" 100% Corvina 2024

A pure Corvina that expresses the most direct side of Valpolicella with freshness and authenticity. Light but not banal, organic, and vinified with sensitivity, Kardia is the most immediate expression of San Dionigi's work: respect for the land, spontaneity in the glass, and a genuine drinkability.

The territory

The wine is grown on the hills of Parona, just outside Verona. The vineyards are planted on silty-clay soils with a significant amount of limestone at depth: an ideal combination for producing fresh, crisp, and subtle wines. The climate is temperate, with marked temperature variations that help preserve aromas and acidity.

The winemaker

San Dionigi is a small family-run farm with a history dating back to 1968, when it began as a simple delivery operation. Today, the new generation has transformed that vision into a truly organic, certified agricultural project focused on landscape regeneration: vineyards, olive groves, woodlands, and biodiversity. An approach in the vineyard and cellar that avoids shortcuts and prioritizes identity.

The vine

Corvina is the soul of Valpolicella. Traditionally vinified as a blend, here it finds its place as a unique interpreter, capable of surprising with elegance and vivacity. A late-ripening grape, with a thick skin and rich in anthocyanins, it produces fragrant wines with a bright ruby ​​color, light tannins, and vibrant acidity.

Winemaking

Harvest is done manually at the phenolic ripening stage. After gentle destemming, fermentation occurs spontaneously, without selected yeasts or temperature control. Everything happens slowly and naturally in stainless steel. The wine then ages in unglazed concrete tanks until bottling, preserving its purity and finesse without compromising its aromas.

The wine in the glass

A clear ruby ​​red color. The nose is a small spring garden: wild strawberry, fresh cherry, aromatic herbs, with a balsamic note reminiscent of mint. On the palate, it's fresh and lively, with a crisp acidity, subtle tannins, and a dry, savory finish. A Corvina that focuses on balance rather than power.

Pairings

Excellent with light yet flavorful dishes: cured meats, fresh cheeses, white meats, traditional Veronese pasta dishes, or lightly spiced Asian cuisine. Serve at 14–16°C. Decanting is not necessary: ​​just ten minutes in the glass is enough.

Evolution

Designed for drinking in its early years, but it can easily age for a few years. Enjoy it young for its vitality, but it can develop interesting nuances in the 5–7 years following the harvest.
