Rhum Clairin Sajous Récolte 2020 - 54.2° 70 cl

Clairin Sajous is produced in the grand terroir of Saint-Michel-de-l'Attalaye, about 4 hours off-road north of Port-au-Prince, from Cristalline: an original, non-hybridized cane variety. The production involves zero chemicals in agriculture, spontaneous fermentations without selected yeasts, old distillation methods without filtration. The mother ingredient is then pressed in the small mill more gently than the typical way of the French Antilles. Each récolte of Clairin Sajous is bottled at the degree it leaves the still.
