I Contadini 's raw chicory puntarelle are made by cold-processing the hearts of Catalogna chicory grown in open fields in Salento. After being hand-cut, the leaves are seasoned directly with extra virgin olive oil, vinegar, and salt, without cooking or adding preservatives.
The texture remains crunchy, and the flavor is fresh and slightly bitter, typical of chicory. It's a ready-to-use side dish, perfect for accompanying meats, cheeses, or legume-based dishes.
