Martelli Pasta - Fusilli from Pisa 500g

Pastificio Martelli's artisanal pasta is made by slowly kneading the finest Italian durum wheat semolina with cold water, using bronze dies to roughen the texture, and then drying it at the traditional low temperature (33-36°C) for approximately 50 hours (depending on weather conditions). The result is a flavorful, well-porous pasta that absorbs sauces well. Only members of the Martelli family work in the pasta factory, combining long-standing expertise with a passion for continuing to produce pasta in keeping with Italian artisanal tradition.

Martelli's Pisan fusilli were designed and produced to commemorate the "famulus Salvius" hired in Pisa on February 13, 1284, by the baker Peciolo to make pasta. They pay homage to the centuries-old tradition of Pisan pasta makers. The shape of the fusilli resembles the famous Leaning Tower with its "path" to the top.

To enjoy it at its best: cook al dente in plenty of lightly salted water. Drain quickly. Enjoy it without seasoning, adding the cheese first (if the recipe calls for it), then the sauce, stir, and serve immediately.
