Manfredi's Paradise - Brunello di Montalcino 2016

From 100% Sangiovese Grosso grapes grown with double spurred cordon on 40-year-old vines.

After manual harvesting, they are destemmed, pressed and left to ferment spontaneously. Maceration on the skins lasts 25 days in glass-lined cement vats from 25 to 50 hl. After racking, the wine decants and clarifies naturally. It ages on the fine lees in 10 hl Slavonian oak barrels for 36 months and in the bottle for another 30 months.

Paradiso di Manfredi is a small family business with 3.5 hectares of land, 2.5 of which are vineyards on seven terraces at 350 meters above sea level.

The soil on which the vineyard rests is rich in minerals of marine origin from the Pliocene. Precisely because of this presence of minerals, fertilizers are not used, but a green manure of spontaneous herbs and treatments based on copper salts and wettable sulfur in very low quantities.

In the cellar, fermentations are spontaneous in glass-lined concrete vats using indigenous yeasts. The variation in denomination depends only on the time the wine spends in the barrel:

13/14 months for the Rosso di Montalcino - 36 for the Brunello - 48 for the Brunello Riserva.

The wines decant and clarify naturally, they are very expressive and powerful.

Only Sangiovese Grosso, known as Brunello, is grown.
