Movia - Classic Method Sparkling Wine "Kapovolto" 2016
A Slovenian zero-dosage classic method sparkling wine made with only Chardonnay grapes grown in the Collio region.
The soil is characteristic of the area, Flysch, with layers of marl and sandstone.
Vinification: Late harvest and destemming. Before pressing, the grapes are left to macerate for 12 hours at cold temperatures. Fermentation is spontaneous in stainless steel tanks and ends in barriques, where the wine ages for a year. For the second fermentation, fermenting must from the current year is added to the wine and the wine remains in contact with the yeasts. Rest for at least 4 years on the yeasts before disgorging.
Movia is located between Italy and Slovenia in the Collio area, in Dobrovo. The company was purchased by the Kristancic family in 1820 and boasts a winemaking history of over 300 years. In the winemaking style we encounter long macerations, spontaneous fermentations and natural decantations and filtrations of the wines.
