Alpine Flower Honey:
High mountain honey obtained from the spontaneous blooms of Alpine pastures between 1,500 and 2,400 meters . It has an amber color, sometimes darker due to the natural presence of honeydew.
The aroma recalls the stem of the cardoon and the boiled artichoke , with a complex and authentically mountain aromatic range.
On the palate, it is slightly sweet , with a long finish, a natural freshness, and a slightly mentholated finish. The crystallization is fine and regular.
An ideal honey for those seeking a product rich in character, a direct expression of the Alpine environment. Excellent with yogurt, fresh cheeses, whole-grain bread, dried fruit, and quality breakfasts.
The Plant:
Alpine Flowers honey doesn't come from a single species, but from a mosaic of wild plants typical of the mountain range. Blooms are concentrated between June and July , when the pastures explode with biodiversity.
The main botanical families present in nectar are:
-
Fabaceae
-
Asteraceae
-
Rosaceae
-
Brassicaceae
-
Boraginaceae
-
Umbelliferae
-
Leguminosae
The most frequent accompanying pollens include raspberry , species of the Ericaceae group (including rhododendron), vetch , honeysuckle , birdsfoot trefoil , thyme and wild thyme .
This rich flora, combined with the extreme conditions of high altitude—strong temperature variations, intense solar radiation, poor soil—gives the honey a complex, fresh, and highly distinctive aromatic profile.

Thun Honey:
Mieli Thun is one of the most respected beekeeping companies in Italy, founded in Trentino and specializing in the production of pure monofloral honeys. The company practices nomadic beekeeping , moving its hives to over sixty selected sites throughout Italy to monitor the blooms at their optimal time.
Each honey comes from a single, recognizable bloom , harvested without heat treatment, preserving its aromas, enzymes, and botanical identity. This approach allows for honeys that faithfully reflect the landscape, season, and plant from which they originate.
The company's philosophy is based on three principles:
• Pure ingredient , unpasteurized and unrefined.
• Territoriality , with collections in selected and uncontaminated places.
• Transparency , from the choice of sites to honey extraction and maturation.
The result is a collection of honeys that does not seek standardization, but enhances biodiversity and the unique character of each vintage and each territory .
