Eucalyptus Honey:

Amber honey with reddish hues and an intense aromatic character. The aroma recalls balsamic leaves, licorice, and aromatic wood. The flavor is full-bodied, slightly sweet, with a pleasant menthol note.

Excellent in herbal teas, with semi-mature cheeses, and in savoury cuisine, particularly in marinades and roasts.

The Plant:

Eucalyptus (Eucalyptus camaldulensis and other species)

A tree native to Australia, now widespread in coastal areas of Italy. It blooms in summer, rich in nectar and balsamic notes.
The leaves and flowers contain eucalyptol, an aromatic compound that is also found in part in honey.

Thun Honey:

Mieli Thun is one of the most respected beekeeping companies in Italy, founded in Trentino and specializing in the production of pure monofloral honeys. The company practices nomadic beekeeping , moving its hives to over sixty selected sites throughout Italy to monitor the blooms at their optimal time.
