The Plant:

1. Acacia (Robinia pseudoacacia)

Native to North America but naturalized throughout Italy, it blooms between late April and May with clusters of highly fragrant, nectar-rich white flowers. It prefers calcareous soils and hilly or valley floor environments.
Nectar is very rich in fructose, which is why honey remains naturally liquid.

Thun Honey:

Mieli Thun is one of the most respected beekeeping companies in Italy, founded in Trentino and specializing in the production of pure monofloral honeys. The company practices nomadic beekeeping , moving its hives to over sixty selected sites throughout Italy to monitor the blooms at their optimal time.
