I Contadini 's rustic eggplant fillets are prepared according to a traditional recipe from lower Salento. The eggplants, grown in open fields and harvested by hand, are hand-sliced, blanched in water and vinegar, then seasoned with extra virgin olive oil, garlic, chili pepper, and fresh mint leaves.

The result is a preserve with a meaty texture and rich flavor, ideal for appetizers, rustic sandwiches, or summer dishes. Artisanal, no preservatives.
