Ilaria Bavastro, owner of the Le Vieux Joseph winery, makes wine from vineyards located in 4 villages, which are Aosta, Quart, Nus and Saint-Cristophe. The vineyards are between 650 and 750 meters above sea level.
Driven by great passion and determination, she cultivates two hectares of vineyard almost alone without the possibility of mechanizing anything in the vineyard, also due to the sapling training method, as well as the presence of terraces on steep slopes.
In the vineyard, only small doses of copper and sulphur are used when necessary and the aim is to preserve the native varieties, with some plants reaching a hundred years of age.
Ilaria founded the winery in 2009 and since then has produced three wines: Mariadzo, a red wine resulting from the blending of several grape varieties grown on the Chetoz hill, Cloe de Cartesan, another red wine of spectacular strength and energy and Petit Prince, a Pinot Grigio aged for a long time in steel.
In the cellar, spontaneous fermentations and long refinements between steel and small wood are preferred.
