Le Vieux Joseph - Clos de Cartesan 2018
Clos de Cartesan is made with a blend of several black grapes, grown near the Dora Baltea on terraces. The soils are of glacial, alluvial morainic origin.
Alcoholic fermentation in the cellar is spontaneous by indigenous yeasts. This is followed by 30 days of maceration on the skins and frequent punching down.
Alcohol content: 13.5% vol.
Format: 750 ml
Just two hectares of vineyards that run on steep terraces and an annual production of around 5000 bottles, this is the extent of Le Vieux Joseph, a Valdostan agricultural business owned by Ilaria Bavastro.
The steep slopes do not allow for work with machines and machinery, all the work in the vineyard is manual and viticulture here, as in the Cinque Terre and in Valtellina, is called "heroic" precisely because of the difficulties that growing vines on these lands entails.
Sacrifices and satisfactions are the key points here.
Manual labor is combined with the non-existent use of chemicals. In the cellar, fermentations are spontaneous and interventions on the grapes and wine are reduced to a minimum.
