Fiano "Don Quixote" 2021 - Pierluigi Zampaglione

"Don Chisciotte" is a white wine obtained from Fiano grapes grown using the Guyot system at 800 metres, on two hectares of vineyard managed with only organic fertilisers, manual harvesting and the only treatments being sulphur and copper in small quantities.

In the cellar the wine is subjected to a long maceration on the skins, with refinement in steel and minimal use of sulfur. The wine is not filtered or clarified.
