Clairin Sonson is produced by Stephan Kalil Saoud in Cabaret, north of the capital Port Au Prince. It is here that Stephan Kalil Saoud grows a particular variety of unhybridized sugar cane, called Madame Meuze, which gives the distillate vegetal and slightly mineral notes. Sonson is further proof of how the terroir, the sugar cane varietals and the pre-modern production techniques significantly influence the aromatic profile of these distillates, considered among the most authentic in the world.
