Champagne Guiborat - Tethys.20
Tethys.20 is a Champagne made with grapes from 3 Grand Crus of the Cote des Blanc, including Cramant, Chouilly and Oiry. Most of the grapes come from the 2020 harvest and 32% are reserve wines (2015-2019).
The wine ages on the lees for 7 months in stainless steel and undergoes total malolactic fermentation before resting in the bottle for at least 24 months. The dosage is 1.5 g/l.
Champagne Guiborat is an independent family house, now in its fifth generation of vignerons. At the helm of the company we find Richard Foquet, young and dynamic. The lands are located in the Cote des Blanc and the production is very limited, around 30,000 bottles per year.
Viticulture is attentive to the environment and the territory and the choices in the cellar are aimed at preserving the freshness of the wines. The choice is not to perform, or to allow it to only partially, malolactic fermentation.
