Cascina Baricchi - Sparkling Wine Queen of Happiness

A sparkling wine from Moscato Bianco Piemonte grapes. The vineyards have been planted since the 80s, reproduced from varieties already present in the company.

The harvest takes place in winter, between December and January. It is a night harvest, when the temperature drops below 5°C and the grapes still on the vine begin to freeze. The yields of the pressing, with a small hydraulic press, are very low and the must is very concentrated. Fermentation is carried out in new Allier barriques and stabilization occurs naturally at cold temperatures. For fermentation, an autoclave and a blend of ice wine from different years and fresh must are used.

This is a sparkling Moscato made using the Charmat method, without the addition of sugar, dedicated by the producer to the mother, with hints of overripe grapes, fresh and with tropical aromas.
