Cascina Baricchi - Barbaresco 2007 DOCG Reserve 15 years

A red wine made from 100% Nebbiolo grapes grown in Neive and produced only in those years considered the best of the best.

The grapes are harvested by hand in crates.

After crushing and destemming, fermentation follows with maceration on the skins for 10 days during which daily pumping over is carried out with the cap submerged. When the cap shows signs of consolidation, the complete racking is carried out with a support tank and the cap is wetted by flooding.

The wine then rests in untoasted Hungarian oak barrels for 5 years and in the bottle for 10 years before being released for sale.
