iContadini - Raw candini
The "Candini alla crudaiola" artichokes are of the "violetto" variety, which is native to the area. They are grown with care and dedication starting in October to be harvested in May. They are not reproduced in a nursery, in fact, for each box of candini harvested, careful and constant work is required on fields with an extension of several hectares. The "candini" are the last artichokes to be harvested, towards the end of May/June, when due to the warmer climate the artichoke does not develop and remains very small and much more tender. Processed fresh, within eight hours of harvesting to guarantee maximum freshness.
