Barbaresco "Paolin" 2019 - Cascina Luisin
Cascina Luisin was founded in 1913 by Luigi Minuto, great-grandfather of the current owner Roberto. The company has always been run by the family to maintain excellent control of the production chain: from pruning to harvesting, from work in the cellar to marketing the wine.
Grape variety: 100% Nebbiolo from the municipality of Neive
Average age of vines: 65 years
Harvest time: mid-October. Vinification: 100% Nebbiolo grapes.
Fermentation: about 40 days in cement tanks. Very vigorous punching down is used for the first 8 days for a good extraction, then we move on to softer pumping over to obtain the noblest tannins, excellent for a great evolution over time.
Ageing: malolactic fermentation and maturation in 40 Hl Slavonian oak barrels, which give the product the elegance and austerity typical of wines made from Nebbiolo grapes.
Maturation time: 30 months in bottle.
