Hibiscus Farm - Zhabib Passito Wine 2022
Hibiscus is the only winery on the island of Ustica, but it is also a farm dedicated to the production of Ustica Lentils (Slow Food Presidium), oil and agritourism.
Wine production mostly revolves around the native Zibibbo grape variety, in a dry variant and a sweet one, the "Zhabib", but we also find Nero d'Avola, Syrah, Inzolia and Catarratto.
Zhabib is a white passito wine made from Zibibbo grapes grown on terraces between 20 and 30 metres above sea level, on shallow volcanic soils.
The vinification takes place in steel at a controlled temperature and the grapes are used which have first been left to dry on racks dedicated to the sun.
Before being placed on the market, the wine ages for 6 months in steel and 6 months in the bottle.
