50 year old vines above 500 meters above sea level. 90% Passerina which gives freshness to the wine, with a small percentage of Malvasia, Bellone and Trebbiano giallo. The soil is clayey with calcareous stones emerging.
In the cellar, whole bunch maceration is carried out for 12-16 hours, followed by pressing and spontaneous fermentation in steel.
The refinement on the fine lees after the fermentation is completed continues until spring. It is bottled after another two months in 54-liter glass.

Abbia Nova is located on the hills of Frosinone in Lazio, between 380 and 550 metres above sea level, where the native Cesanese d'Affile grape reigns supreme and the most cultivated white is Passerina.
Daniele and Luca Proietti, cousins, grow vines according to logic and natural methods, without vandalism that could ruin rather than preserve the excellent grapes they harvest.
A winery that collects 5 Crus within 6 hectares and that manages to combine experimentation with cultural tradition.
In the cellar, amphorae, cement, steel, wood and demijohn glass are used.
