Petricor – We Grow Stones (Lucinasco, Liguria)

In Lucinasco, in the heart of the Alta Valle Impero, Liguria is made of stone and light. It is a vertical, rugged land, where cultivation requires balance rather than strength. This is where Petricor was born, an agricultural project that restores value to time and landscape, combining the delicacy of the Taggiasca variety with the authenticity of an ancient and conscious agricultural practice.

" We cultivate stones " isn't a slogan, but a way of life. It's the tangible image of someone who works a soil that crumbles in their hands, forcing them to slow down and show respect. It's the recognition that true quality comes not from what's added, but from what's preserved.

Petricor grows exclusively Taggiasca olive trees , a small and precious variety, adapted over centuries to the valley's mild climate and poor soil. The olives are hand-picked in the winter months, placed in ventilated crates, and pressed within hours in the company's mill. The extraction is cold, with meticulously controlled temperatures to preserve the fruit's fragrance and identity.

The result is a Taggiasca monocultivar extra virgin olive oil with a harmonious and clean profile: almond sweetness, hints of Mediterranean herbs, a slight bitter edge, and a finish reminiscent of the salty sea breeze. An oil that doesn't dominate, but rather accompanies.

From the same raw material, other specialties are born: crispy olives , truly crisp, processed to concentrate flavor and texture; pitted and pickled olives, for those seeking the pure essence of the fruit; and the Taggiasca olive pâté , creamy, natural, and intense. It all stems from a common principle: intervene as little as possible, letting the earth and the fruit speak for themselves.

The olives are harvested and processed immediately, hand-selected and washed with water for a month. Fermentation then continues in brine for several months, with the addition of thyme and bay leaves harvested from the estate's olive groves.

Petricor doesn't chase numbers, but consistency. Every bottle, every jar tells a story of a relationship between man and landscape, between toil and gratitude. It's both an agricultural and human vision: a return to a time when oil isn't just a condiment but a story, and Taggiasca isn't just a variety, but an identity.
